I brewed an American Pale ale a while back, and came out delicious… so I decided to take the malt profile and change up the hop schedule to make some comparisons and clear out some doubts about using high alpha hops for aroma…
Here’s my recipe…
10 lbs of 2-Row Pale Malt
3/4 lbs Caramel Malt 40 °L
1/4 lbs Caramel Malt 60 °L
1/4 lbs Carapils/Dextrin Malt
1/2 oz Citra Pellet Hops 14 AA% (First Wort Hop)
1/2 oz Citra Pellet Hops 14 AA% (Post Boil @ 180 °F)
WLP060 American Ale Yeast Blend
Estimated OG 1.057 (about ~72% efficiency)
Water Profile:
Reverse Osmosis Water
2.1 grams gypsum salt (added to mash)
2.3 grams calcium chloride (added to mash)
I was supposed to add 2.3 grams of gypsum and 2.5 grams of calcium chloride to the boil, but I got caught up making the video and completely forgot about it… as long as my fermentation doesn’t suffer because of the low levels of calcium, I should be good…
Here’s the Process…
Mash-in @154 °F using a grist to water ratio of 1.33 gallons of water per pound, which turns out to be about 3.75 gallons of water… a single infusion mash was done, and I used about 2 quarts of boiling water to keep my mash temperature steady at 154 °F… so my final grist to water ratio was about 1.5.
I then proceeded to mash-out and raised the temperature to 172 °F and fly sparged. I collected roughly 6.75 gallons of wort…
When transferring the wort to my kettle I added 1/2 oz of Citra hops for bittering (first wort hop), and began to boil… 60 minute boil was done without any further hop additions until after boil was done…
… after the boil I proceeded to cool down the wort, and once it reached 180 °F, I added the 1/2 oz of Citra hops for aroma…
Once the wort was chilled to 70 °F, I pitched the slurry made with a 1 liter starter of WLP060 American Ale Yeast Blend…
The beer is fermenting At 66 °F and will remain in the primary fermentor for a total of about 3 weeks…
