This week I was talking to one of my friends, Eric, about using liquid yeast or dry yeast when brewing beer… this question comes up over and over…

In fact most brewers I know of brewed their first batch with dry yeast from a beer kit… I know I did…

… and although I don’t necessarily dislike dry yeast, I now know the advantages of liquid yeast…

For one, there are more varieties and combinations you can do with liquid yeast, but the main reason why I prefer liquid yeast over dry yeast is what I call “The Navy Seal Yeast Strain”…

When you apply the Navy Seal filtering out process to yeast, what you are doing is getting rid of weak and poor performers and are left with only the strongest and most active yeast cells…

With liquid yeast, you can start getting stronger and more active cells by making a yeast starter… re-hydrating dry yeast doesn’t really activate yeast the same way as a yeast starter does…

If you do use dry yeast, just like with liquid yeast, you’ll want to re-use the yeast after fermentation and you’ll find your yeast will improve and ferment stronger and better…

Dry yeast seems to have too many yeast cells that die off early or perhaps weren’t viable to begin with, but that also depends on how fresh the packet is and who the manufacturer is…

I have had liquid yeast be just as bad as dry yeast, but it’s overall more viable and I get more consistent results with it…

If you are brewing higher gravity beers and you need to add more yeast towards the end of fermentation to further attenuate your beer, you’ll want to pitch yeast from a starter… that’s where liquid yeast has a good advantage over dry yeast…

If you pitch yeast straight into a halfway fermented beer (there is alcohol), your yeast will have less chances of surviving…

If you make a yeast starter to pitch yeast into a halfway fermented beer, then yeast will be stronger and more likely to survive and finish fermenting the beer…

The same concept applies to yeast being re-used from your 3rd, 4th or 5th batch…
